Things have been crazy busy here with traveling, last day of school and one very special birthday. Today Henry turned 3! We celebrated on Saturday but he's officially a 3 year old today. With that came preschool orientation this morning. Yay for change. He also now has a big boy bed, it's crazy to think about how time flies. I can't believe he's already 3 geez! Here's some snippets of his birthday fun.

Almond and Kale Smoothie
Kale is the super food you are suppose to want to eat but if you don't then you can totally blend it up into an awesome smoothie that taste like almond. This smoothie is creamy and literally you can't taste the kale. I don't have a fancy blender just an old school one and it works just fine to make this drink. If your looking for a healthy drink that's full of protein and filling I highly suggest you try this, even if it's just once you gotta do it.
Almond and Kale Shake

serves 1
Ingredients:
- 1 c. packed torn kale leaves (discard the thick rib in the center)
- 1 c. unsweetened almond milk
- 1 tbsp. almond butter
- 1 date, pitted
- 1 tbsp. soaked raw almond (see note at bottom)
- 1 tbsp. coconut oil
Directions:
Blend everything in a powerful blender until completely smooth and drink immediately.
*The book suggest you soak the raw almonds in cold water at least half a day to overnight. You can keep the almonds stored in the fridge in fresh water for a week to snack on or to use in smoothies. Apparently a raw almond has an enzyme on the outside of it that makes it hard to digest and by soaking them it is removed, so you get the maximum benefits of the almonds.
